A well-structured Chianti, full bodied, lively and intense.
IL Volpetto, meaning Fox Cub, is a symbol of the Tuscan countryside. When seen in their natural habitat they are considered a sign that the area is in harmony with nature. Volpetto is their take on the Sangiovese grape – a small range of totally modern wines, made using the best possible modern methods to bring out the very best in the grape variety. With the Chianti DOCG they have taken classic styles and updated them to suit the modern palate, giving a fruit-driven wine which is a true reflection of Chianti.
The grapes are destemmed and gently crushed. Fermentation takes place in stainless steel tanks at a controlled temperature of 25C with macro-oxygenation that lasts for 12 days. Frequent pumping over occurs throughout fermentation in order to extract colour and achieve soft tannins, followed by malolactic fermentation. The juice is left in contact with the skins for 8 –10 days.
Volpetto Chianti is well structured and full bodied, lively and intense.
To be served with red meats, roasts, pasta with meat sauce and cheese.
