The Wine People are passionate about the production and distribution of Italian wines on the global stage, with a strong ethos of sustainability and commitment to organic. The grapes used for the M&S Rugoso Rosso and Bianco Appassimento are sourced from the provinces of Trapani, Agrigento, and Palermo, in the western part of Sicily.
These territories are remarkably diverse, each with its own distinctive character, all of which contribute to the authentic expression of Sicilian wines. The passion of their growers is guiding a continuous commitment to environmental and social sustainability.
The grapes are destemmed and gently pressed in a pneumatic press. Before fermentation, the juice is chilled to allow a natural separation of the sediment from the juice. After racking, selected yeasts are added to initiate the alcoholic fermentation. Fermentation takes place in temperature-controlled stainless steel tanks at 18°C for approximately 10-15 days.
The Pinot Grigio is de-alcoholised using the «vacuum evaporation technique». With this method it is possible to remove the alcohol at a temperature of 20°C, preserving the freshness and the varietal characteristics of the wine.
