Fresh, mineral, tense and well-structured, with salinity, fruit, cucumbers, apricots and floral notes.
The Tara wines come from a single 4.5ha vineyard situated 22km from the Pacific near the town of Huasco at the southern end of the Atacama Desert. Showing every effort to allow the character of this extraordinary place come through into the glass, winemaking is kept as simple and unobtrusive as possible at every stage: hand-harvesting, whole-bunches, native yeast fermentations, no additions of sulphur dioxide until bottling, stainless steel or neutral oak vessel.
The grapes were manually harvested and whole bunch pressed in bins using just feet. Fermentation was in stainless steel with indigenous yeasts. Maturation was 70% in stainless steel and 30% in used Burgundy barrels for 24 months. Bottled with no filtration, no fining and a small amount of sulphur.
A fresh, mineral Chardonnay, tense and well-structured. The chalkiness and salinity of the soil come through on the palate. The nose reveals fruit, such as sweet cucumbers and apricots, as well as floral notes. As you sip the wine, it evolves in the glass.
Great with shellfish, seafood, oily fish and white meats.
