S.A Les Roches Blanches was founded in 1994 by Nicolas Gueusquin, a young and dynamic entrepreneur. The négociant is based in Dizy, just outside Epernay. Today, the négociant operates in a newly built, modern winery with thermo-regulated stainless steel vats, underground chalk cellars and 40 gyropalettes.
Grapes are whole bunch pressed and the juice is racked to a tank where it is allowed to settle for at least 12 hours. The clear juice is racked and yeast added to encourage a thorough fermentation at a cool temperature, approximately 15-17°c. After a short period of post ferment maturation, the wine is bottled with a yeast addition to allow for secondary, in bottle, fermentation. Les Roches Blanches uses the traditional Champagne method and the wines are matured for two years in chalk cellars in Dizy.
Clean, fresh and floral bouquet with a hint of hazelnut leading to a delicate yet refreshing citrus palate and a long balanced and rounded finish.
Great when paired with shellfish or stronger-flavoured fish such as mackerel or smoked salmon, and creamy or wine-based sauces.
