Aromas of red fruits and florals lead to a fresh, intense palate with persistent strawberry and raspberry notes.
New to the UK, Vallformosa is one of the top 5 Cava producers in Spain – family owned and with a history spanning 150 years, their focus on quality, innovation and sustainability has seen them win countless awards including numerous gold medals at last year`s IWC and IWSC awards including Spain`s best white wine.
The winemaking process consists of a soft press (bladder press), to extract the must. Then it is continuously stirred for 24 hours and longer, and fermentation by grape varieties is carried out. Once fermented, the blend is made. The wine is pressed, clarified and refrigerated, and the second fermentation in the bottle is carried out for about 12 months. Afterwards, it is disgorged and the expedition liquor is added depending on the type of cava.
Aromas of red fruits like cherries, strawberries and blackberries, combined with floral notes and undergrowth. The palate is intense, fresh and persistent with hints of red fruits such as strawberries and raspberries, with a lingering finish.
Recommended for drinking on its own at any time, as an aperitif and wit all kinds of food. Serve at 5-6ºC.
