Producer Information

Fattoria Di Vaira is the largest agricultural company in Molise. It is in an agricultural territory where natural resources and human presence have co-existed for centuries with extraordinary balance. On the Adriatic Sea, between the green of the hills and the blue of the sea, there are ideal conditions for realising one of the basic principles of biodynamic agriculture: the vision of the company as an agricultural organism.

The area covers 500 hectares and is a complete "agricultural organism", with the presence of vineyards, olive groves, vegetables and cereals, surrounded by hedges, bushes, woods and eight artificial lakes that enrich the agro ecosystem.

Wine Making

The grapes are taken from clay rich soils and nurtured by the beautiful Mediterranean environment. They use compost from their heard of cows, green manure and cover crops, along with biodynamic preparations 500 and 501. Preparation 500 is made from fresh cow manure packed into cow horns and buried in the winter earth. It is then stirred in water and sprayed onto the soil in autumn and spring. Preparation 501 is made from crystals of quartz, which are crushed and continuously ground down to a fine powder.

The quartz powder is packed into cow horns and buried in the summer earth. Towards the end of summer, it is removed and stored in the light, then stirred with water and sprayed into the air, in the morning when warmth and light are ascending.

The grapes are manually harvested and pressed with 50% destemmed and 50% whole bunch. After a 5 day maceration on the skins, fermentation is in stainless steel tanks with spontaneous malolactic fermentation. Bottled unfined, unfiltered and with a tiny amount of sulphur.

Tasting Note

Great drinkability with vibrant fruit flavours of quince and stone fruits. Very tasty with a nice bit of texture and some nuttiness.
