Tsarev Brod winery is located in the village of Tsarev Brod near the town of Shumen, very close to the only rock lay in Europe – Madara Raider which is an object of cultural and natural heritage of UNESCO. The project for the winery started in 2001 when the family of agronomists planted the first hectares of vines there. Being people close to the land they realized that to build a cellar and buildings is easy and fast but vineyards need more time and systemic care.
The grapes for this Extra Brut Pét-Nat Riesling were picked at 19% sugar content in the middle of Sept 2021 from Tsarev Brod winery’s own vineyards near the city of Shumen, Black Sea Coast, Bulgaria. It has started fermentation in small 300 liter tanks at 14-16 °C and has been bottled at 35g/l residual sugar to finish fermentation in the bottle.The wine has aged in the bottle for 4 months over its fine lees, then a part disgorgement is done and the wine remains with its fine sediment.
Gentle apricot colour, very fresh nose with intense notes of lemon and yellow fruits. Medium bodied with attractive apple and citrus notes, fine and persistent mousse and very pleasant, refreshing finish.
Great as an aperitif or with seafood, salads, fish & chips, cheeses and fruit.
