Producer Information

Southern Lights; another name for the Aurora Australis, the surreal and stunning stars best visible in New Zealand’s winter months.

The Wine growing regions of New Zealand span the latitudes of 36-45 degrees covering a 1600km length. Marlborough in the North East has the sunniest climate. Grapes are sourced from specially selected wineries in this region.

Wine Making

Clean juice was fermented in stainless steel tanks with selected yeast strains to maintain aromatic purity. Temperature-controlled fermentation in stainless steel tanks.

Tasting Note

Fresh and vibrant with passion fruit, gooseberry and some melon characters. It has a balanced richness of fruit with a floral note through the palate, with an intense depth of flavour and a crisp finish.

Food Matching

Will compliment green salads, Sushi, shellfish, and veal. or pair with sharper ingredients such as capers, olives, horseradish, salt-cured meats, sour cream. Any dish with herbs as the main flavour.
