Santa Carolina, founded in 1875 and currently owned by the Larrain family, proudly champions Chilean Heritage with a focus on innovation. Through the journey of the valleys, Santa Carolina respects each varietals typicity and treasures the expression of fruit. The estates, owned and managed by Santa Carolina, are located in Maipo, Rapel, Leyda, Casablanca and Colchagua.

Wine Making

Harvested nearly two full months after the grapes used for the dry wines of this variety, Sauvignon Blanc grapes are expressly left on the vine to allow them to ripen in excess and grow susceptible to botrytis cinereal (noble rot) so that they acquire the signature flavors of this type of wine.

Once harvested, the grapes are pressed and the must is fermented in stainless steel tanks at 17–19ºC. Subsequently, the wine is kept in oak barrels where it can keep some of its natural sugar content. Once bottled, the wine was cellared for 6 months before it is released to the market.
