Producer Information

Stefan Sander worked in vineyards around the world before settling back into the family estate. His grandfather brought organic viticulture to the vineyards (and winery) in the 50s after noticing how his wife’s MS condition improved after he stopped using chemical fertilisers and started gardening organically. Stefan has now moved towards biodynamics. His wines are clean and expressive, perfect for ‘German doubters’.

Wine Making

The grandfather was interested in organic philosophies at a time when few others were thinking about the health of either growers or consumers. The grandfather planted the roots; his son Gerhard perfected the processes; and grandchild Stefan has forged the distinctive style of their wines.

They aren`t interested in dogmatism or fanaticism but they do know that living soil is the only guarantee for truly terroir-marked wines. Their work is dictated by the biodynamic calendar, which draws from human experience, leavened by the influence of the solar and lunar cycles, the constellations and the movement of the solar system. Merlot grapes are destemmed and lightly whole bunched pressed, to retain the plum Merlot flavors and the distinctive fizz in the wine. Fermentation takes place in stainless steel tanks.

Tasting Note

Light salmon pink in colour with distinct peppery and redcurrant aromas. It’s a refreshing bone-dry wine with typically Merlot plum flavours and great acidity which is carefully bottled to retain a hint of fizz. 

Food Matching

Great with shellfish and crisp salads.
