Complex yet subtle, this elegant wine offers aromas of quince, walnut, honey, and floral notes.
Dating back to 1808, M. CHAPOUTIER is one of the oldest companies in the Rhône Valley. Yet, its world renown and the quality of wine can truly be accredited to the arrival of Michel Chapoutier in 1990. His willingness to change the set way and to seek, discover and reflect the full potential of the terroirs, letting the soils express their true character, has put their wines firmly on the wine world map. For Mathilde Chapoutier, 8th generation of the founder, wine is the fruit of pleasure.
Through her travels and encounters, unique soils have revealed their secrets with different characteristics. Wine is a permanent exploration, a never-ending journey. Mathilde has curated a selection of her favourite regions each bearing the compass as a symbol, which symbolises her quest outside the Rhône and the discoveries she has made during her adventures.

>p>Grapes are hand-harvested at maturity. The musts are obtained after a long pressing and are lightly settled before fermentation. Part of the fermentation is carried out in stainless steel tanks and part in demi-muids.
The lees are stirred up (bâtonnage) for the first 2-3 months adding texture to the wine. 40-30% takes place in stainless steel vats. The remaining 60-70% is aged in demimuids (600 litres) barrels, 10% of which are made of new wood and 90% of wood previously used for one to three wines.
