Wine Making
The grapes are harvested at sunrise to retain freshness. The Cabernet grapes are mostly whole bunch fermented, whilst the Merlot are crushed and destemmed. Spontaneous fermentation takes place in stai
The grapes are harvested at sunrise to retain freshness. The Cabernet grapes are mostly whole bunch fermented, whilst the Merlot are crushed and destemmed. Spontaneous fermentation takes place in stainless steel tanks for 10 days, with a slight carbonic maceration. The skins are removed after fermentation to avoid over-extraction of tannins and colour. A total of 50% of the wine is matured in French oak barrels for 18 months, with sulphur use limited to an absolute minimum.
