The Winery of Good Hope was founded in 1998. They believe in combining innovation with a healthy respect for tradition. In other words, their approach is old plus new, and the best of both worlds.
The grapes are harvested at sunrise to retain freshness. The Cabernet grapes are mostly whole bunch fermented, whilst the Merlot are crushed and destemmed. Spontaneous fermentation takes place in stainless steel tanks for 10 days, with a slight carbonic maceration. The skins are removed after fermentation to avoid over-extraction of tannins and colour. A total of 50% of the wine is matured in French oak barrels for 18 months, with sulphur use limited to an absolute minimum.
