Dimitris Georgas is a fourth generation wine maker of the Georgas family. He took over the running of the family estate twenty years ago and the family’s wine-making techniques have evolved over the years. They are a small artisan wine producer who make fine wine using natural farming techniques (including organic and biodynamic vineyard practices), with low or no intervention vinification processes.
They produce less treated, terroir wines, from local Mediterranean grapes, using no, or as little as possible additives. Dimitris can be seen in his vineyard, larking about with Gordon, Gino & Fred in their recent TV series in Greece.
The vineyards are farmed organically, with some biodynamic practises. The grapes are manually harvested and destemmed before a 20-30 day cold maceration. Fermentation is in stainless steel tanks for one month using indigenous yeasts. The wine undergoes a natural malolactic fermentation and is bottled unfined, unfiltered, with a tiny amount of sulphur. It is then aged in bottle for two months.
