Until the 1950’s, Cedric’s grandfather, Raymond, like many farmers in the Touraine, practised mixed farming: a few acres of vines, some cereals and pastures to feed the horses and the other animals. When his father Guy took over the farm in 1968, he gradually moved over to vine cultivation, finally specialising in 1991. Cedric’s arrival on the estate in 1999 confirmed that commitment to the vines and, above all, to wine production.
Sustainable; environmentally-friendly and sustainable production techniques are used in the vineyard; natural weed control, organic fertilisation, spring de-budding and green harvesting in July if necessary to control the yield. Slowly pressed grapes, with a cool ferment and matured in stainless steel tanks for six to eight months.

Pair with shellfish and seafood in creamy sauces.
