Domaine de la Chapelle Bizot in Chiroubles, the Cru with the highest vineyards in Beaujolais. The traditional trade hasn`t been able to access more fruit from this grower until this year when we are delighted to say we have managed to negotiate a parcel from this wonderful grower.
This Chiroubles from a lovely single estate is a selection of 4 different parcels. Hand picked grapes come in to the cellar and are destemmed which means semi-carbonic maceration in the tank As the sugars and yeasts work away at the pulp, the skins burst and the juices run.
9 day cuvaison enables the lovely balance between colour, fruit, substance and tannins. The fermented juice is pressed in a pneumatic press and the wine is put into concrete or old wooden vats to undergo malolactic fermentation.
Refreshing, bright and crunchy with aromas of lilac and red cherry on the palate.
Pair with mushrooms, game, charcuteries and grilled white meats.
