Founded in the 11th century by hermits of Sainte Cécile d’Estagel, the estate originally made wine for pilgrims to Santiago de Compostela. Today, it spans 80 hectares of sun-soaked, south-facing vineyards on sandstone soils, cooled by Mediterranean breezes. We’ve long worked with the charismatic Jérôme Castillon, the 9th-generation owner, now joined by his son Tanguy, who brings global winemaking experience from North America, South Africa, and even Henners in Sussex.
Tanguy has introduced biodynamic practices to the estate, with a strong focus on phytotherapy—using plant-based remedies to naturally improve vine health and vineyard resilience.
Produced from the estate`s young vines (average age 10 years) growing in vineyards overlooking the Camargue and strewn with smooth pebbles from the Durance river valley. After harvesting, the grapes are chilled for 3 days before a natural ferment at controlled temperatures. Unoaked and `croquant`.
