Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy. The winery began as a consortium of associated grape growers in 1950, today It unites 11 separate cellars and their combined 4,500 grape growers across 7,000 hectares of vineyard, to produce an impressively broad portfolio from an intriguing palette of indigenous and international grape varieties.
Bottega Vinai Sauvignon is made exclusively from Sauvignon Blanc grapes cultivated in the hills of the Valle dei Laghi, Trentino. De-stalked grapes undergo cold maceration for 12 hours to facilitate extraction of the aromas. After this the grapes are soft pressed and undergo temperature controlled fermentation.
Intense yet refined varietal characteristics, herbaceous, nettle, elderflower, tropical fruit and lemon zest. Palate is ripe and juicy with crisp citrus acidity and white peach notes, an attractive texture and depth, and a gently floral finish.
Try with seafood risotto or pasta, grilled white meat and soft cheeses along with summer salads.
