Champagne Bollinger

Ripe fruit and spicy aromas, hints of roasted apples, compote and peaches, with structure, length and bubbles like velvet.

Producer Information

In 1911, Georges Bollinger’s British agent gave him the idea for the name Special Cuvée - “special” written the English way, without an accent. He thought the French expression “Brut sans année” was no match for such a subtle champagne… More than a hundred years later, the name of Bollinger’s key figure champagne still symbolizes both its expertise and its history.

Wine Making

Special Cuvée is composed of over 85% Grand and Premier crus of the three main Champagne varieties: 60% Pinot Noir, 25% Chardonnay and 15% Meunier. It is cellar aged for twice as long as required by appellation regulations. It is moderately dosed at between 7 and 8 grams per litre.

Tasting Note

Ripe fruit and spicy aromas, hints of roasted apples, compote and peaches, with structure, length and bubbles like velvet.

Food Matching

Pair with any fish, especially sushi, sashimi, shrimp, prawn, crayfish, grilled lobster. Also pair with poultry and white meat, Parmesan and good cured ham.
