The Robles family has been dedicated to making wines in Montilla since 1927. At the end of the nineties, the third generation took over in the winery and understood the need to incorporate organic viticulture and work with native yeasts into the tradition from the winery.
Founded by Antonio José Robles, and now run by Francisco, his grandson, Bodegas Robles produce a delicious range of sherry-style wines using the same ‘solera’ method used in Jerez.
All the wines, ranging from the elegant and bone dry Fino to the luscious nectar-like sweet PX are made using the Pedro Ximenez grape grown on the local white soil ‘Albarizo’.
Organic Oloroso wine is aged for six years in oak barrels in an oxidative process that lends the wine its rich colour and flavour. A layer of lavender, poppies and wild clovers covers our earth and feeds our Pedro Ximenez vines. The intriguing “solera” system mixes very old wines with younger wines, mothering the young wines. A unique experience of maturity and freshness.
Aromas of raisins, green apples, dry laurel leaf and incense. It is sweet, but dry and fresh, with an increasing aromatic subtlety. Silky with a long lasting finish.
Perfect for serving with dishes which include among its ingredients figs, dates, maple syrup, chocolate, curry or soy sauce. It is a good choice for smoked fish, red meat and meat stews.
