Nestled in Casas Ibáñez (Albacete), Vega Tolosa is a family-run winery in DO Manchuela with deep roots and a passion for organic viticulture. Its old Bobal vineyards lie at the edge of the beautiful Cabriel Valley—now recognised as a UNESCO Biosphere Reserve. The winery blends tradition with modern techniques to produce wines of quality, with care and respect for the land a top priority.
The grapes are destemmed and fermented with the skins, starting with a cold soak at 5°C to preserve their fresh aromas. Fermentation then takes place at 14°C using wild yeast in stainless steel tanks with one month of skin contact post-fermentation. The wine then spends two more months aging on its fine lees in concrete tanks for a little added finesse.
