Ontañón is the name of vineyard in a mountain valley in Rioja, where for many generations the Perez-Cuevas family has owned land. The family’s identity is rooted in this sub-region of Rioja, which is located near their hometown of Quel. Our vineyards are, on average, about 800 meters above the sea level. Around 500 Hs in Rioja DOCa, 80 Hs in Ribera del Duero DO, 400 Hs in Rueda DO and 100 Hs in Navarra DO in property.
For Ontañón Kaori, in which each variety is vinified separately, we use only the juice from the first press. The must then undergoes natural, static settling or débourbage for a duration of two days. It then ferments in stainless steel tank at 14 degrees Celcius for 19 days. After fermentation is complete, the wine rests for three or four days in order for the coarser lees to be eliminated naturally.
The wine then goes into one- or two-year-old American-oak casks for three months and only with the finest lees. Axer this, the wine is racked into barrels and remains there for approximately four months before bottling.

Officially the perfect wine for Japanese cuisine. So versatile, this wine would pair well with any aromatic and fish dishes.
