Bodegas Cesar Florido

Smooth, soft, a little savoury and round.

Producer Information

Family run since the 18th century they are one of the oldest producers in the entire region. Unlike many bodegas, they own all of their 21 hectares of vineyards and make and age the wines exclusively in their traditional style bodegas. César Florido, 5th generation owner, continues the production of these wonderful artisanal wines. This is the first time the wines have been seen in the UK since the 1920s.

Wine Making

En Rama roughly translates to “on the branch” or “raw”. It refers specifically to the biologically aged categories of fino and manzanilla sherry which, unlike the richer styles of oxidatively aged sherries, are only fortified to 15%. Due to the lower level of alcohol, a layer of living yeast known as flor, develops on the surface of the wines as they mature in barrel. protecting the wine from air and the oxidative process. The result of this protection is the palest, freshest and driest style of sherry. The En Rama approach, which uses minimal or zero filtration and fining, showcases a different, rawer expression of the sherry’s potential. The result is a wine with more aromatic intensity, fullness of body, and flavour.

Tasting Note

Smooth, softer, less savoury and rounder than the 2017 bottling, possibly due to the drier conditions. It is delicious!
