Wine Making
Most vines are over 50 years old meaning low yields and high-quality grapes. 10% of the wine is wild fermented in old oak barrels and the whole wine spends 2 months on lees before bottling.
Tasting Note
Classic baked apple and zippy citrus character with added weight and a touch of creaminess from the extended lees ageing.
