Nestled in Damery, just a few kilometres from Épernay, Maison Maurice Choppin has been working the unique terroirs of the Marne Valley for more than 7 generations. Proud of his family heritage and his humble approach to living things, Benjamin Choppin makes natural and distinctive wines that are powerful, well rounded and balanced. Inspired by the "Belle Champagne", he values its exceptional heritage and shines the light on the work of the winemaker.
Understanding of the personality of the individual terroir, observation of its interaction with biological and seasonal agents, adaptation of human intervention to accompany the fruits to their most vivid expression through the implementation of choices in the cellar that are as respectful and natural as possible. These are the concepts Benjamin uses to develop champagnes that best represent the singularity of the vintage and the identity of the terroir. For this purpose, no tricks are involved but only natural elements such as the wood in the cellar (tonneaux and barriques) and sustainable practices for vineyard management (the company is HVE-3 certified).
The grapes were manually harvested, destemmed, pressed and vinified in 500l oak barrels with indigenous yeasts. Spontaneous malolactic fermentation and aged on the lees for 48 months. Disgorged at least 12 months before sale and all their ‘liqueurs de dégorgement’ are made with their own wines vinified in oak and French sugar cane. Bottle without any filtration, fining or chaptalisation.
