Aromas of toasted nuts, hints of raisins and flavours of dates, sweet figs and molasses.
Founded in the mid nineteenth century by Emilio Hidalgo Hidalgo, the company is owned and operated by the fifth generation of his descendants. The winery houses casks of the original wine used to found the company, which is carefully renewed and enriched by the current generation of the family.
The winery is located in the hottest DO in Spain, and the arid Levante wind intensifies the region’s heat, essentially cooking the grapes on the vine during ripening. The humid Atlantic Poniente wind alternates with the Levante and promotes the growth of flor.
The PX grapes undergo a slow partial fermentation, before ageing in a system of horizontal rather than vertical soleras. This ensures the barrels are as close to the floor. No sulphur is added during the wine making or at bottling.
Very dark, almost opaque colour, with aromas of toasted nuts from old solera and hints of raisins. There are flavours reminiscent of dates, sweet figs and molasses, that are long, complex and very pure.
Lovely with bitter chocolate desserts, ice cream or blue cheese.
