The Bortolin Angelo winery produces its Valdobbiadene DOCG carefully, respecting the oldest wine-making wisdom, as well as the regulations for producing Prosecco Superiore di Conegliano-Valdobbiadene. The grapes are exclusively manually harvested and softly pressed to extract only the free-run juice. The must is left to stand at a cold temperature of (5-10C) in stainless steel tanks for 10-12 hours. The fermentation is in stainless steel tanks for about 15-20 days at a constant temperature of 18-20 degrees.
